Tsuta's ramen is a collaborative expression of Japan's "umami" culture and a diverse array of global ingredients. With meticulous attention to detail and a wealth of culinary expertise, our signature ramen portrays a seamless blend of Japanese, Western, and Chinese influences. Each bowl is our commitment to sourcing only the finest and safest ingredients from Japan and beyond.

Shoyu Soba

This ramen is a testament to the harmonious marriage of Japanese and Western culinary influences, expertly curated within a single bowl. Each element in this dish embodies the fusion of diverse cuisines: the four seasons of Japanese culinary tradition, the delicate textures of Chinese cuisine, the flavorful accents of Italian cooking, and the layered complexity of French gastronomy. The four basic arithmetic operators for taste unite to create a transcendent dining experience that defies traditional boundaries.

How to enhance your experience

Start from the 6 o'clock part of the bowl. Mix the sauce with the soup accordingly and enjoy the overlapping textures of the flavors. By the time you finish the soup, the figs will greet you like a dessert to conclude your journey.

Shio Soba

Our Shio Soba is a delicate art of Japanese and Western gems. We enhance the umami with five kinds of salt and dry ingredients strategically chosen to synergize the broth.

The accompanying sauces are highly compatible with the core flavor paste of our Shio Ramen, and with our house-made noodles, we hope you sense not only the Japanese but also a hint of European ambiance.

Start from the 6 o'clock part of the bowl. Blend the sauce into the soup as desired, savoring the harmonious interplay of flavors and textures. The richness of each sauce and the fresh apricot-like notes of Duxelles complement the sweetness of leek and dried tomatoes.

Try gently swirling the seasonings into the broth in your ramen spoon each time. By doing so, you maintain a consistent flavor profile throughout each slurp, allowing you to savor every narrative until its conclusion. Whether you opt for intermingling elements from both sides or letting each ingredient swim freely in the soup is entirely up to you. Either approach should hold a wonderful story.
